العسل.. الذهب السائل الذي لا تنتهي صلاحيته

العسل هو أحد الأطعمة القليلة التي لا تنتهي صلوحيتها مع الزمن.
يجدر الذكر أن السكر أيضاً لا تنتهي مدة صلاحيته إلا أن جودته ستنخفض بعد عامين من تصنيعه على عكس العسل الذي تبقى جودته كما هي مع مرور الوقت، إذ سيبقى له الطعم ذاته حتى بعد مرور 100 عام، فحتى العسل المتبلور آمن كذلك للأكل، وفقاً لما ورد في موقع Mash.
ومن المثير للدهشة أن علماء الآثار عثروا على أوان من العسل عمرها 3000 عام في أحد المقابر الفرعونية، وقد كانت صالحة تماماً للأكل.

لكن ما السر الذي يجعل العسل يدوم كل هذه المدة؟ يحتوي العسل على نسبة منخفضة للغاية من الماء، والتي تعتبر متطلباً أساسياً لنمو الميكروبات التي تؤدي إلى انتهاء صلاحية الطعام، وهذا يفسر سرعة فساد الفواكه والخضار الحاوية على الكثير من المياه.

عدا عن ذلك فإن درجة حموضة العسل منخفضة للغاية أيضاً، ما يجعل نمو البكتيريا مستحيلاً، كذلك يحتوي العسل على بيروكسيد الهيدروجين ومضادات الجراثيم، الأمر الذي يجعل منه طعاماً لا تنتهي صلاحيته.
